One of the things that I love about traveling is experiencing the change of seasons. After living in South Florida for 38 years I began to realized that we really only had two seasons there. We had the HOT SEASON which encompassed November through April; and the HOTTER SEASON of May through the end of October! I really never realized just how much I missed the nip in the air that Autumn brings. Along with that does come fewer hours of daylight. But it’s that chilly air and early sunset that make me want to get in the kitchen and cook soul warming meals.

Traveling in our RV “Ladybug” means that our entertaining is much more limited in the number of guests we entertain. We have come to realize that 6 guests can comfortably enjoy nibbles and drinks, but only 4 of us can sit down to a nice meal at our dinette. All that means to us is that we entertain more often and it’s more relaxed and easy on the chef.

I have to admit that it is quite a refreshing change from the huge events we used to prepare for catering clients! The recipes I turn to now are no longer geared toward serving a crowd. Now I love preparing everyday, simple, warming dinners that are easy enough for a weeknight but impressive enough for guests any night.
