It will be available for purchase, along with the first book Tasting Alabama. So I thought I would share a recipe from Tasting Alaska – Potato Chip Crusted Salmon.
Salmon is abundant in Alaska and in the second book I have quite a few new and exciting recipes for that superb fish. In the Starters chapter I’ve included a recipe for a very versatile Salmon Spread as well as an amazing grilled pizza topped with roasted garlic, artichokes and salmon. In the Salads and Dressing chapter I have a “hearty enough for dinner” Ranch Salad with Grilled Salmon. This one is so easy and yummy that you will want to make it part of your weekly rotation!
Of course, there’s so much more than salmon recipes in Tasting Alaska. To give you a true sense for what eating like a local is like in Alaska, I have recipes that include many of the other ingredients that are prevalent in our 49th state. Halibut, Dungeness crab, all sorts of berries, squash, caribou, venison and moose all make yummy appearances in Tasting Alaska!
My recipe for Tasting Alaska’s Potato Chip Crusted Salmon came about because I hate wasting food. It seemed like we were always throwing away the bag of potato chips when all that was left were the little broken pieces. I had made pretzel crusted chicken once or twice, with the remnants of a bag of salty pretzels, so I thought “Why not try using potato chip crumbs?”. It worked so well with the chicken that I decided to try using the leftover chip pieces for salmon.
The first time I tried it with salmon, I pan fried the fish and used the traditional breading method of dredging in flour, then dipping in egg and lastly coating in the chips. But unfortunately much of the coating fell off the fish. That’s when I tried using the spicy mayonnaise spread only on the top of the fish, topping with the potato chip crumbs and baking the salmon at high heat. It was perfect! The flavor was outstanding and Steve and I LOVED how the tender salmon was enhanced by the superior crunch of the potato chip crust. It was a winner for sure!!!

This is a perfect case of “waste not, want not”! Whenever I get to the bottom of a bag of potato chips, instead of throwing those tiny bits at the bottom of the bag away, I reserved them in a zipper bag for crusting chicken, pork chops or fish. In this case it’s salmon the gets the potato chip crumb treatment and it is Oh So Good!!
4 (4-ounce) salmon fillets
1 teaspoons Diamond Crystal kosher salt
1/2 teaspoon coarsely ground black pepper
2 tablespoons good quality mayonnaise, such as Hellmann’s or Duke’s
A splash or 2 of your favorite hot sauce, such as Louisiana Crystal, sriracha or tabasco
2 cups finely crushed potato chips (a mix of plain and salt & vinegar is my favorite)
Snipped chives
Lemon wedges

Ingredients
4 (4-ounce) salmon fillets
1 teaspoons Diamond Crystal kosher salt
1/2 teaspoon coarsely ground black pepper
2 tablespoons good quality mayonnaise, such as Hellmann’s or Duke’s
A splash or 2 of your favorite hot sauce, such as Louisiana Crystal, sriracha or tabasco
2 cups finely crushed potato chips (a mix of plain and salt & vinegar is my favorite)

Instructions
Preheat the oven to 400º F (200º C). Line a baking sheet with parchment or aluminum foil. In a small bowl mix together the mayonnaise and hot sauce.
Season the salmon fillets liberally with salt and pepper on both sides and place them on the prepared baking sheet without touching. Spread a thick coat of the mayonnaise mixture on each fillet. Press the crushed potato chips onto the tops of the salmon fillets.
Place the fish in the preheated oven and bake for 9 minutes, or until the topping is slightly browned and the fish is still a bit rare.
Serve immediately with lemon and chives.
