One thing that is true for pretty much all meat, however, is that it needs a resting period after it has been cooked. This is a process where the proteins all bind together more and the juices redistribute, That also ensures that the meat will lose fewer juices when it is sliced or cut open. A resting period of five to ten minutes is normally sufficient for most meats, and it’s vital for everything from steak to a roast bird.
