Rving with family is the best ever! Especially when Steve and I are in our coach and Brian and Eve are in their camper.
For so many years we looked forward to the day when we could meet our kids camping. And that day finally came. As soon as our son booked a site at Myrtle Beach State Park for July 4th weekend we called to do the same. Unfortunately the park was totally booked for that weekend. So we did the next best thing. We found space at Barefoot RV Resort in North Myrtle Beach that was only a short drive away.
First night our RV
Brian and Eve had only seen pictures of our RV so we were excited to have them come to our home for a visit first. They were quite impressed with the way the renovations turned out. (I promise there is a big reveal coming soon!) When the four of us get together there is always a ton of food involved. And just because we are living in an RV with a teeny tiny kitchen nothing has changed. We started off with charcuterie and cheeses. Which was followed by Linguine Bolognese served with freshly baked Garlic Knots.
But dessert was the really fun part. I made Smitten Kitchen’s fabulous Whole Lemon Meringue Pie Bars. Yup. I even made gorgeous meringue in my small space. And it was luscious. Before we knew it, it was close to midnight. We hated saying goodnight but we all needed to get some sleep before spending the next day at their camper.

The drive to the State Park was a beautiful one. The plan was to meet on the beach right there at the park. It was just glorious. After a couple of hours of sun and surf we walked back to their site for grilled hotdogs and bratwurst for a quick and yummy lunch. Then back to the beach for more luxuriating. We are so blessed to have an amazing daughter in love. Being together with Eve and Brian is so joyful. And I’m not the only good cook in this family. They had planned a feast for dinner. Eve prepared a fabulous wedge salad, baked potatoes and sautéed mushrooms while Brian grilled gorgeous filet mignons.
At the end of the evening we had a hard time saying goodbye. Fortunately we have another trip with them planned for the end of August. That one will be 9 days of camping and all of them will be at the same campgrounds. In fact we requested to be side by side. And we will cook together every day. So looking forward to more RVing with family!!!
