I know I’m a bit late to the party, but I had to share this crave worthy Pumpkin Chocolate Chip Loaf recipe with you in time for Thanksgiving.

One bowl recipe

This is a really easy, one bowl recipe that you need to have in your dessert rotation. It is so good that it will have you buying pumpkin purée all year round so that you will have it hand any time the craving hits.

I’m sure you will find this funny, but now that Steve and I live in an RV I find myself baking more than I did in our sticks and bricks. The biggest difference is that I find myself baking a lot of loaf cakes. They take up less precious counter space when stored and they slice up so nicely for perfect serving. Most of the loaves that I have made don’t even require my stand mixer. Which is awesome because, again, precious counter space. And also my mixer is stored in one of our “basement” compartments. So a little hard to get to. I also need to make sure that I can fit my cake pan in my oven.

When we looked for the perfect RV we actually did not want one with an oven. RV ovens are extremely small. Plus without that oven I have two fabulous cabinets under the stove top that I couldn’t live without. I did a tremendous amount of research before choosing the perfect substitute for that oven. My decision was to buy the Breville Smart Oven Air because it is large enough to roast a turkey and bake a cake.

This oven has super convection so my loaf cakes have baked evenly and come out of the pan as perfect as can be. I could go on and on about this subject. But I won’t because this is a post about a Pumpkin Chocolate Chip Loaf. This is the perfect size for a smaller Thanksgiving gathering that so many of us are having this year.

Pumpkin Chocolate Chip Loaf

This is a super moist, one bowl loaf cake that’s perfect for any time of year. It’s filled with chocolate chips and cinnamon spice for the perfect dessert or snack.

Ingredients

2 large eggs

1/4 cup canola oil

1/4 cup olive oil

1 cup granulated sugar

1/2 can (7.5-ounces) pumpkin purée (do not use pumpkin pie filling!)

1/4 cup whole milk

2 tablespoons water

1 3/4 cups all purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

1 heaping tablespoon ground cinnamon

1 cup semi sweet chocolate chips

1 tablespoon all purpose flour

2 tablespoons butter, melted

2 tablespoons turbinado sugar

Baking spray

Instructions

  1. Preheat oven to 350 degrees. In a large bowl whisk together the eggs, oils and sugar until smooth. Add the pumpkin purée, milk and water and whisk again until smooth.
  2. Add the 1 3/4 cups flour, baking soda, salt and cinnamon to the pumpkin mixture and stir until combined.
  3. Toss the chocolate chips with the 1 tablespoon flour. And add to the mixture in the bowl. Stir to evenly distribute the chocolate chips.
  4. Spray a 9-inch x 5-inch loaf pan with baking spray.
  5. Transfer the batter to the prepared loaf pan and smooth top.
  6. Place in the preheated oven and bake for 35 minutes.
  7. At the end of 35 minutes remove the pan from the oven and brush the top with the melted butter. Sprinkle the sugar over the entire top of the loaf. Return to the oven and continue baking for another 8-10 minutes until the top is golden and firm. I also like to use the wooden skewer test by inserting it into the center of the loaf to make sure it is baked throughout. If the skewer comes out clean remove from the oven. Let cool slightly before removing from pan. Remove from pan and flip so that the crunchy topping is up. Let cool completely before slicing.
