Oysters Are So Delicious

Fried Oysters with Piquant Dipping Sauce and Garlic Bread
Oysters are a bivalve which, according to the “Food Lover’s Companion”, describes “any soft-bodied mollusk, such as a clam, scallop, oyster or mussel, that has two shells hinged together by a strong muscle”. Of course what they are not telling you is just how delicious these bivalves are. I love them all but I think my favorite is the juicy, succulent oyster. I love them prepared every way imaginable including no preparation at all just shucked and resting in a pool of its own liquor with maybe just a twist of the pepper mill. One slurp, a chew or two and down they go. Or I adore them in a stew also known as an oyster pan roast like Steve and I enjoyed for Valentine’s Day. But my favorite preparation of all is dipped in batter or cornmeal and fried. My girlfriend Jackie who is really like a sister to me shares my love of oysters so whenever I have them and she’s not with me I always say “this is for Jackie”! In New Orleans I always order the oyster po’ boy at Domilise’s which Steve and I feel is the best place for this traditional Crescent City Sandwich. It’s so yummy with everything on it from lettuce to hot sauce. OMG I am making myself hungry. And when I saw shucked oysters in COSTCO I absolutely could not resist buying them to make for dinner that very night. I prepared them fried with simply a cornmeal crust and a spicy piquant dipping sauce and they were delectable to the max.
