Happy Thanksgiving 2022! We all know that Thanksgiving is celebrated on the 4th Thursday of November. But this year our family celebrated in October because that’s when we were together.

Thanksgiving is a day for gratitude and I am grateful each and every day for my wonderful family. Sadly, since we started traveling full time in our RV we have not been close enough to Raleigh NC in November to continue our tradition of Turkey Day together. This year we were able to go camping together in mid October at beautiful Jordan Lake, so we chose to have a very traditional Thanksgiving dinner on Saturday, October 22!
Eve and I shared the cooking duties which made it so much easier on both of us. Eve and Brian had brought an 8-pound turkey breast which was ideal for just the four of us, plus leftovers. I seasoned and roasted the breast which fit perfectly in our Breville Smart Oven Air (Amazon Affiliate Link). It could have easily held a whole 12-pound turkey if we needed it to! As you can see in the photo at the top of this page, our turkey breast was cooked to perfection. The meat was tender and still juicy while the skin was well seasoned and very crispy.
We bought that particular oven because of its size and Breville’s top notch reputation. Our RV does not have an oven, just a stove top. We actually wanted one with no oven because we gain a double cabinet beneath the three gas burners. The Breville never disappoints!
Eve prepared her incredible mashed potatoes and green bean casserole. And they brought soft and pillowy Parker House rolls.
Earlier in the day Steve made his yummy Cinnamon Streusel Cake and I baked the stuffing. And, of course we had Ocean Spray Cranberry Sauce (Amazon Affiliate Link) and turkey gravy to balance out the dinner plate.
We devoured our splendid meal with gusto. The food was enhanced by lively conversation about gratitude, along with hopes and dreams for the future. It proved to us that any day can be Thanksgiving Day when you are sitting around the table with those you love.
Our meal was Thanksgiving perfection! Of course, the very best part was celebrating with Brian and Eve!!!
Looks like a perfect Thanksgiving meal. We had 12 adults here and made too much food! Ha.
My mother and grandmother always taught me that if there were no leftovers, someone must not have had enough to eat. Because of that I ALWAYS make too much food! Even for events we catered, there were always leftovers for our clients to enjoy the next day or two.
