Instructions
- In a large frying pan over medium/high, add olive oil and green onion, fry for four minutes, then add strips of chicken breast. Fry for five minutes while stirring. Don’t crowd the pan. If need be cook in batches.
- Add salt, pepper and paprika. Fry for another minute and remove from heat.
- Squeeze tahini on the bottom of the open baguette. Place avocado, tomato and chicken breast on top of the tahini. Drizzle some more tahini on top, close the sandwich and cut into 4 pieces. Serve warm or at room temperature.
Notes
This could easily be made ahead by cooking the chicken and scallions in advance. Just heat through before assembling the sandwich. You could also make several of these to serve a crowd!
