I received a review copy of Shelby Kinnard’s and Simone Harounian’s new book on “instant healthy meals for managing diabetes” last week and couldn’t wait to dive in because all of the recipes sounded so delicious. I don’t think it matters whether or not you are diabetic, these recipes are healthful and quite tasty. The recipes are also great for anyone following the Keto Diet! And, because life is short so we should eat dessert first, I started my foray into The Diabetes Cookbook for Electric Pressure Cookers with the Crustless Key Lime Cheesecake!
